The three commercial jobs

A refurbishment: the kitchen works, the season has worn it down, and the winter closure is the window to replace surfaces, fix the flow and bring in the equipment that has been on the list for two years. The commonest of the three, and the one most tightly planned around a date.

A new venue: a unit that was a shop or a different restaurant, or a new build, and a kitchen designed from the menu outwards. Longer, and the job where the workflow is decided rather than repaired.

An upgrade: a hotel kitchen serving more covers than it was built for, a beach club adding a service, a café becoming a restaurant. Often phased, because the venue cannot close, and the job that most needs a company that has phased a kitchen before.

What the commercial brief asks for

The commercial quote route asks these, so that the companies price the same venue.

Is this the same form as a home kitchen?

The same route with different questions: the commercial brief asks about the venue, the service, the equipment and the reopening date, and it goes to companies that do commercial work. Say it is a business and the questions change.

What about the regulations a commercial kitchen has to meet?

They are settled between you, the kitchen company and the authorities for your municipality, and this site does not state what they require. The companies that do this work know what a venue has to satisfy to reopen and build to it.

Can a hotel kitchen be done without closing?

In phases, yes, with a company that has done it before. It costs more and takes longer than a closure, and the brief should say which parts of the kitchen must keep running.
