What cabinetry is made of, and why it matters here
A cabinet is a carcass and a front, and the two are bought separately even when they arrive together. Carcasses are almost always a board product; what differs is the thickness, the edging and how the back is fixed. Fronts range from laminate through lacquer and veneer to solid timber, and the front is what the kitchen looks like and what it costs.
On Mallorca the material question has a second half. Coastal humidity and salt reach a kitchen that is closed for the winter, and a front that swells, a hinge that corrodes or a carcass that takes on damp along an outside wall is a kitchen that has been chosen for the mainland. Ask what the cabinetry is made of and how it behaves in a house that is shut for four months.
Then the hardware. Hinges and drawer runners are the parts a kitchen is used through, and they are where a premium range earns its price. Soft-close, full extension, and a runner that carries a drawer full of pans without complaint are worth more than a finish nobody touches.
What a cabinetry request usually covers

The island question
Most people who ask for a new kitchen on the island want an island, and the room decides whether it is right. An island needs clear space around it on every side that is used, which in practice means a room wider than most galley kitchens and many village-house kitchens. Where the room is narrow, a peninsula gives most of the same working surface and the same seating without blocking the route to the door.
An island with a hob needs extraction above it or downdraft in it, and either changes the ceiling or the cabinet below. An island with a sink needs water and waste in the middle of the floor, which in an apartment on a concrete slab is a question and in a finca on a stone floor is a project. An island with neither is the simplest and often the best: a working surface, storage, and the place everybody stands.
Size it to the room. A standard island from a range is a size, not a design, and the difference between an island that makes a kitchen and one that fills it is usually a few centimetres in each direction.

Can I keep the carcasses and replace the fronts?
If the carcasses are sound, level and dry, yes, and it is the cheapest way to a kitchen that looks new. New fronts, new hardware and often a new worktop on the cabinets already there. It is worth having a company look at the carcasses first; damp along an outside wall is the usual reason it does not work.
Are drawers worth the extra cost?
For base units, almost always. A drawer brings everything in it to the front; a door hides half of it at the back. The cost is in the runners, and it is the part of a kitchen most used and most noticed.
What about humidity and salt near the coast?
Ask what the cabinetry is made of and how it behaves in a house shut for the winter. Board that swells, hinges that corrode and fronts that lift along an outside wall are the usual failures, and the materials that avoid them are a normal part of a kitchen specified for the island.
Does an island need a hob or a sink?
No, and the simplest island is often the best one: a working surface, storage and the place everybody stands. A hob needs extraction and a sink needs water and waste in the middle of the floor, and both are projects in their own right.
