Three layers, decided early
Task light is the light you cook by: on the worktop, under the wall units, over the hob and the sink, and over the island. It is the layer that is missing from most kitchens and the one that makes the difference between a kitchen that works at night and one that does not.
Ambient light is the evening: the room after dinner, lit low, with the task light off. Pendants over the island, a wash on a wall, lighting inside a glazed unit. It is what makes a kitchen a room rather than a workspace.
And on Mallorca there is a third consideration, which is the sun. A kitchen that opens onto a terrace gets glare through the glass for hours, and a worktop that faces it needs light that competes with the afternoon rather than with the dark. That is a decision about where the light sits, and it is made with the layout, not after it.

When does the lighting need deciding?
With the layout, before the ceiling is closed. The wiring for pendants, under-cabinet lighting and separate circuits is run while the room is open, and adding it later means opening it again.
Is under-cabinet lighting worth it?
It is the single most useful light in a kitchen and the one most often missing. It lights the worktop where the work is, without the cook standing in their own shadow.
Can lighting be built into the cabinetry?
Yes, and in a bespoke kitchen it usually is: inside drawers and cabinets, under the wall units and along a plinth, wired as part of the kitchen. In a fitted kitchen the range decides what is possible.
