What changes when the owner is abroad
Decisions move earlier. The choices a resident makes on a Tuesday afternoon by looking at a sample against the wall have to be made before the work starts, from samples sent or from one visit planned for exactly that. A written decision schedule, with dates, is what stops a project stalling while somebody waits for an answer in another time zone.
Responsibility narrows. One company responsible for the whole job, including the trades it needs, is worth more to an absent owner than three cheaper companies who each need coordinating. Ask who is in charge of the plumber, and whether the electrician is theirs.
And the calendar becomes the design. The work falls into the weeks the house is empty, which on this island usually means the winter, and the lead time for cabinetry and a worktop that arrive by sea is planned from the date you next arrive, backwards.

Can a kitchen really be done without me there?
Yes, and many are. The decisions move earlier, one company takes the whole job, somebody on the island holds a key, and the company sends photographs and calls before anything irreversible. One visit for the survey and the samples is worth planning; the rest can be done from anywhere.
When is the best time?
The winter, for most second homes: the house is empty, the companies are less stretched than in spring, and a kitchen fitted in February is ready for the first guests in May. Plan it backwards from your arrival date and forwards from the delivery.
What should be different about the kitchen itself?
Surfaces that do not mind being shut up: porcelain or quartz rather than wood, cabinetry specified for humidity, appliances that can be isolated, and a layout a guest can read on the first evening if the house is let.
